In 2021 Christoph and Emily from Wein Goutte made two ciders, this still “Vin de Pommes” and the lightly sparkling “Apfel Cidre.”
This cider is made from their apples, their neighbours’ apples, and from their beloved poultry producer, who has a few apple trees. They are all certified organic.
This is ZINGY – it has a vivid and bracing nose, yet is confusingly not overly citric. It is rather tart, with apple skins, unripe bananas, sharp melon fruits and lemon cream – ok it’s a bit citric! On the palate it is lithe as a silken sheet, though with a crispy structure.
